Food preservation is to prevent food corruption (food quality deterioration and loss of nutritional value) caused by oxygen, bacteria and other microorganisms. Preserving of food nutritional value, texture, smell and taste is such an important matter. That is because of its effect on reduction of food wasting as well as the community health. Nowadays, there is less food corruption because of refrigerators nevertheless, the time of keeping food in refrigerators is limited and some mildew may grow on them because of moisture and oxygen. Tomato paste is one of the favorite flavors which is not excluded from this rule. Tomato paste is packed in container which are not suitable for maintaining it after opening its door. Regarding to this, it is necessary for its dish to be changed moldiness of tomato paste is one of the common things occurs when air reaches the paste. Mildew grows easily because of air which exist in paste container. Moisture in the tomato paste container produces toxic material which causes cancer. One of the approaches to preserve tomato paste from corruption is the use of antibacterial dishes which in its production nanoparticles are used. The application of these containers is preserving the properties of the intrinsic material as well as preventing the growth of fungi, mold and bacteria. Good antibacterial and antifungal properties are due to the specific surface area increment which is because of the reduction in particle size and as a result increment in reactivity as well as photocatalytic properties and photo-oxidation in contact with chemical and biological components.

The “antibacterial activity” were evaluated by ISIRI 10900 standard “Measurement of antibacterial activity on plastics and other non-porous surfaces. its results are as follows:

Antibacterial activity is an indicator of the product ability to eliminate bacteria. It is obtained by comparison of bacteria number present on control and nanometric samples after 24 hours’ exposure. According to standard, When the antibacterial activity of the product is between 2 and 3, the effectiveness is good. If antibacterial activity is greater than 3, the effectiveness is intense and strong. Furthermore, “the antifungal activity” were evaluated by ISIRI 13703 standard, “Measurement of antibacterial activity on polymers and hydrophobic materials”. The amount of Aspergillus Niger was measured after 48 hours which showed the reduction to 55% in comparison to control sample.
